What you need

cup granulated sugar

cup heavy cream

tsp vanilla extract

tsp vanilla bean paste

0 Preheat oven to 350°F. 1 In a large mixing bowl, whisk together the egg yolks and sugar until thick and light in color, about 2 minutes. 2 Heat the heavy cream in a small saucepan over low heat until it comes to a simmer. Remove from heat then gradually, in a slow stream, pour the cream into the egg mixture, whisking continuously. Mix in the vanilla extract and vanilla bean paste. Strain the mixture through a fine mesh sieve. 4 Place 4 oven-safe ramekins in a baking dish or roasting pan and divide the creme brulee mixture among the ramekins. 5 Carefully pour warm water into the baking dish around the outside of the ramekins until it fills between halfway and two-thirds up the sides of the ramekins. Bake for about 40 minutes or until the creme brulee is set but still jiggly when shaken. 6 Allow the ramekins to cool before removing them from the water, then refrigerate for at least 3 hours. 7 Sprinkle a layer of granulated sugar on the tops of each ramekin, covering the entire top of the custard, and caramelize using a kitchen torch. Cool for a few minutes to allow the sugar to harden. Serve immediately and enjoy!View original recipe
