0 Preheat oven to 350°F. Line 2 baking sheets with parchment paper. 1 In the bowl of a stand mixer fitted with a paddle attachment, cream the butter, brown sugar, and granulated sugar until combined and fluffy. Scrape the bowl well, then add the egg and vanilla with the mixer on low speed. Mix until well combined. 2 Scrape the bowl again and add the flour, cornstarch, baking soda, cinnamon, and salt. Mix just until the ingredients are incorporated. Mix in the oats and butterscotch chips. 3 Scoop the dough onto a parchment-lined pan using a #16, two-ounce cookie scoop (about ¼ cup). 4 Place the cookies onto the prepared pans, spacing them at least 2 inches apart. 5 Bake at 350°F for 11-13 minutes or until golden brown around the edges. 6 Allow the cookies to cool for at least 10 minutes, then enjoy!View original recipe
