
Oatmeal Butterscotch Blondies
Chewy, soft, and loaded with sweet butterscotch bits, flecks of chocolate, plus a touch of maple. These Oatmeal Butterscotch Blondies are about to be your new go-to fall treat!
What you need

cup dark brown sugar

cup granulated sugar

egg nog

tsp vanilla extract

tsp maple extract

cup all purpose flour
tsp cornstarch

tsp baking soda

tsp baking powder

tsp salt

cup old fashioned oats

cup butterscotch chips

oz chocolate chunks
Instructions
0 Preheat oven to 350°F. Lightly grease an 8” x 8” square pan with cooking spray and line with parchment paper to create a sling, with an overhang on all four sides. 1 In the bowl of a stand mixer fitted with a paddle attachment, cream the butter, brown sugar, and granulated sugar until fluffy and light in color, about 2 minutes. 2 Scrape the bowl well then with the mixer on low speed, add the egg, vanilla, and maple flavoring. Mix until well combined. Scrape the bowl again. 3 Add the flour, cornstarch, baking soda, baking powder, salt, and oats, and mix until only a few streaks of flour remain. Stir in the butterscotch chips and chopped chocolate, reserving some for the top (if desired). 4 Press the mixture evenly into the prepared pan. Sprinkle the reserved butterscotch chips and chopped chocolate on top. Bake for 20-23 minutes, until the edges are golden brown. 5 Allow to cool, cut into squares, and enjoy!View original recipe
