Soft and Chewy Snickerdoodle Cookies

What you need

cup butter, at room temperature

cup granulated sugar

organic eggs, at room temperature

tsp vanilla extract

tbsp cornstarch

tsp cream of tartar

tsp baking soda

tsp salt

tbsp cinnamon
Instructions
0 Preheat oven to 350°F. Line 2 baking sheets with parchment paper. 1 In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and granulated sugar until combined and fluffy. Scrape the bowl well, then add the eggs one at a time and vanilla with the mixer on low speed. Mix until well combined. 2 Scrape the bowl again and add the flour, cornstarch, cream of tartar, baking soda, and salt. Mix until all the ingredients are well incorporated. 3 In a small bowl, combine the sugar and cinnamon for the coating. Portion the dough using a #24 cookie scoop (about 3 Tablespoons). Roll each scoop into a ball, then roll in the cinnamon sugar mixture until completely coated. 4 Place the cookies onto the prepared baking sheets, spacing them at least 2 inches apart. 5 Bake at 350°F for 11-13 minutes or until golden brown around the edges. 6 Sprinkle the cookies with the remaining cinnamon sugar while hot, if desired.
